GRUYERE MAIA CHEESE Compact, firm and elastic texture. Semi-hard type, soft on the palate, made with partially skimmed milk. Typical taste, soft, clean, sweet, well developed characterized by a moderate propionic action, even spicy when ripe. Inner appearance: regular, well-defined rind. Open paste with natural colour, evenly distributed, regular, smooth and shiny eyes.
